Tonight the cavefamily and I went shopping and I picked up a bunch of neato ingredients for a few of the recipes I’ll be posting here. It took a bit too long and by the time we got home there wasn’t time to make the stuffed Moroccan tomatoes or the B.L.A.S.T. salad. So I made some dressing for my salad tomorrow. Actually there’s probably enough for about three or four salads. :)

Here’s our ingredients. I probably would have used regular white vinegar but I didn’t have any so rice vinegar it is.

I peeled and ate about a third of the pomegranate seeds before I decided I should make it into a salad dressing. I didn’t really know how to extract the juice so I just made it up as I went.

So chop ‘em up in the food processor and then we’ll strain the pulp.

I used a spatula to smoosh the pulp and get all the juice out.

Next is the lemon… we’ll do the same thing.

The lemon came out of the food processor stained from the leftover pomegranate juice… it smelled incredible.

Quarter cup of olive oil.

Tablespoon of the vinegar.

I picked up this locally-made mustard at Whole Foods. Not only is it totally awesome because it’s called “Original Sin” and it’s made by Lusty Monks, it’s incredibly delicious. I put a half teaspoon of it in the dressing.

I also put in a couple turns each of fresh ground pepper and sea salt. Then ya gotta shake it!

Tada! I’ll put it on my delicious salad tomorrow and let you know how it is.
UPDATE
So I tried out the dressing on my salad today:

It was very delicious. My salad consisted of romaine lettuce and spinach, fresh San Romano tomatoes from our garden, crushed walnuts, avocado, chopped onions, feta cheese, and finely sliced roast beast. Because i was trying to take that photo when I poured the dressing on I went overboard. There was too much on my salad and as I got the then end it got a bit overpowering.
One thing I thought of as I was eating was the cost of the dressing. Way too much. The pomegranate was $1.50 the lemon was $0.33 and all the other stuff probably came out to about a buck. That’s nearly three dollars for what looks like will be two, maybe three, servings. Ouch. Oh well… live and learn.
